Judging from the plant in the background, it seems to be some kind of cress, which brings back childhood memories of egg and cress sandwiches for me (and I'm guessing that my childhood was probably of the same vintage as this recipe cards!)

I was going to say melon but I think cuke is more likely. Shouldn't the oeufs verts be accompanied by jambon?
